Ha, i got one better. Chocolate(final form and texture) also is based on cooling rate. Cool it one way you get tootsie rolls, the other hershey bar.

ok, I brought my chocolate up to 1475F for HT, Do you think this is too high?
 
Speaking of milk quenching, in "The Art Of Blacksmithing" there is an aboscure recipe for "burnt steel repair quench" which is supposedly able to repair steel when it has been overheated a bit much and it contained alot of milk.
 
Using the proper terminology - burnt steel is scrap, can't be saved. Overheated steel can be saved. Burnt means that the grain boundaries have oxidized !
