Awesome collection. I'm on my way to doing something similar, though I don't know how thorough I'll be.

Oh how I wish the new Zaans had that old stonewash...

It's possible that the difference is the result of how much more easily S35VN polishes than S30V. I'm not sure, just a theory. S35VN does polish up much more easily than S30V.

True, but my local shop had (probably still have) a couple new pivot Zaans with the old stonewash. Aren't the new pivot styles only available in S35VN? My guess is they're 2012 manufacture since a lot of my LKS stock is 2012 date. My 2012 S35VN small 21 also has a darker, slightly more aggressive stonewash than my 2013 21 and 2014 Zaan.

Yes to your first question, so they must have changed the stonewash media or procedure. It may change from time to time depending on what's available. I have a pair of 2011 Umnumzaans with what looks like the "new" stonewash.
