Wanted: High quality chef's knife

I've been using a Spyderco Santoku for years and I think it's time to get a real chef's knife. I think I'm looking for something in the 10" blade range, although that's not set in stone. I'd like to trade a NIB Spyderco Dyad (Micarta handles, quite collectible) and I'd prefer a new chef's knife, although lovingly used and cared for would be an option. LMK whatcha have!

Just added: I also have a nice crystal cigar ashtray and a REALLY sweet aluminum cigar ashtray CNC'd from a solid block of billet. One of a kind, very cool. Open to trading them as well.
