Watanabe 180mm Nakiri
I own three of these for work so this one needs to go (yes, three... I love this style knife). I started to re-profile the blade at on a 200 grit water stone, stopped because I got distracted, then put her away. Figured it would be a good state to sell in as most avid kitchen knife enthusiast would rather put their own edge on anyway. There's is a tiny chip on the edge too small for my crap camera to pick-up but will go away once you take it to higher grit (highly recommended you use a good set of water stones for optimal performance). EDIT: Actually, if you look closely at the center most part of the knife's cutting surface you can barely make it out.
This is the pro model. Double bevel Yasuki blue steel core with stainless outer. He currently only makes five a month and they cost $200 each excluding shipping from Japan. But this one comes with a custom octagon handle worth $120 in laminated, doweled hardwoods. I can't recall all of the woods that make-up the handle but it is very nicely balanced. The handle does not compromise the characteristic weight-forward feel of the knife and its ability for quick chopping.
