If you are willing to consider a folder, you might take a look at the Benchmade 111H2O. It is designated as a "Dive knife", but is a moose in, under, or out of water... axis lock, great scales, and recently on sale at a place where you can cash in your REI browney points.....

Just a thought.... but it has become my go-to folder for the types of work you have described....
