Loving that navy burlap but I've never had a Scandinavia grind before, how hard are they to maintain? Do they cut as well as a convex?

I've gotten a few Scandi knives and they always come holy hell sharp - even more so than the convex edged knives. I haven't used them enough to need to sharpen so I'm sorry I can't help on maintenance. Some may recommend stropping on a somewhat hard-backed surface where your contact point with the strop is that Scandi edge/flat area.

I have a couple scandi and i think they are pretty easy to maintain. It seems like a lot of people swear by scandi for wood carving tasks. I tend to want scandi on my smaller knives more than on the larger ones. That navy burlap/natural bolster is really becoming my grail though.

Personally I find scandi's easier to maintain then convex but that's mainly because I have more experience with them. I use Japanese waterstones for sharpening and touch ups. I rarely strop them. As far as how they cut vs. convex I'd just say that it's a different. I wouldn't say that one is better then the other. It's really a matter of preference.
