I live in Central Florida, and our family goes to Disney World a few times a year for birthdays and whatnot. Years ago I even worked there as a third party participant, meaning outside company contracted for a specific job, but we went through all the same Disney indoc, so I understand the goings-on of Disney.
To each there own, but I carry a knife (and gun) in one capacity or another everywhere that I'm not physically searched or scanned with a wand, DW is no exception.
Losing a prohibited item in such a non-permissive environment is a risk you take, and if lost or misplaced, you need to just chalk it up as a learning lesson and move on. DW has no desire to find and return prohibited items. I'm not saying they're going to find and keep it intentionally, but they're certainly not going to make any effort to help you recover a knife that you should not have had in the park.
As a side note, thieves are also keen to the fact that these items and others of value are left in cars by mandate or choice, and present easy targets in the wide expanses of DW parking lots. This is true for all the local parks and resorts, both Disney and the like. I find things in my pockets or bags and under my direct control are far more secure than locked in my unattended vehicles.
I wish you good luck, but work on letting go by enjoying the process of picking out a replacement.
