LOVE Dexter fillet knives.

I put a worksharp 20° convex bevel / edge on it and it slices for a LONG time!

Also LOVE their 3.5" net knife. Serrated monster and dirt cheap.

Since you got a Vicki in your avatar, you should try Victorinox paring knives too.
Less than ten bucks and replaced my expensive kitchen knives for simple cutting tasks.
