Spyderco Persian, Caly3, Kopa (Gold MOP, Cocobolo, Apple Coral, Evrina, Tiger Coral, Micarta)
 
Schrade Minuteman, the old carbon steel USA made one (stupidly sold off to finance another purchase)

Victorinox Rambler, enough blade for most things and some really handy tools

Old Hickory 5" carbon steel flexible boning knife, handy all around kitchen knife
