You're killing me! Here in California foie gras is illegal My last two lobes on the East Coast cuit au torchon (a touch of Madeira and cognac, a whisper of white pepper and nutmeg) were just beautiful

I cooked mine sous-vide till wonderfully pink in the middle (nouveau torchon )

Thanks! Yeah, Sergey creates some neat stuff. I believe he has a background in jewelry-making and it certainly comes thru in the intricacy and attention to detail in his work.
