What do you do with your old belts?

I let them pile up for a bit then throw them out. I try to grind bevels with a new or nearly new belt in 50 or 60 grit. When that starts to loose it edge I use them for general use, like cleaning up forgings or Damascus, profiling, tapering tangs, grinding steel for fab work or other projects. They have plenty of life left after they are not ideal for bevel grinding. Using them like they are free is kind of an exaggeration, just use the right belt in the right condition to maximize efficiency of grinding and belt life.
