what if you where on a deserted island?

I would take a medium size bearded axe with a nice broad blade. Can chop trees, and do some smaller stuff if need be.

Otherwise my new Busse Killa Zilla would be great to have along.

I'll go with the previous (smarter) posters that said Machete! Maybe an ESEE Lite Machete for the excellent scales or a nice Condor. I'm pretty sure the machete would be the right choice for almost any island that you could be stranded on.
 
I'd like to point out that since you're on an island, your knife will get lots of contact with salt water and salty air, so it would be pretty stupid not to choose a stainless blade ;)

Therefore I choose the Fallkniven A1. Large enough for most tasks (opening coconuts, shelter building), not too large to be unwieldy for smaller ones (gutting fish, building traps).
 
I'd take my Victorinox Electrician Plus with me. The tools on it can come in handy to make traps, clean fish, carve a wooden spoon and make other tools like perhaps a hammer or small axe if there are rocks, just like people did in prehistory.
 
How many screws and wine bottles are on a deserted island? I don't see how a SAK would be of much help in a wilderness survival scenario.
