What steel should my griptilian have?

For a Grippy, I'd go with 154CM, not because it's necessarily any better than the others (it's not better, but it's not really any 'worse'), it's just easier to sharpen. Toughness in a folder blade(for MOST people) is a bunch of hooey! Cutting technique is more important. I say this because the weakest part of a folder is the pivot, followed by the lock. Think of a folder as being "pre-broken", provide basic care and maintenance, and you'll be fine. I cut and open a lot of boxes at my job, and find the worst part is the tape residue, which tends to gum up and stick when cutting cardboard. You think your knife is duller than dishwater, but it's just gummed up on the edge. Regular isopropyl alcohol or acetone on a paper towel will remove tape residue quite easily. Don't get caught up in the 'Steel Wars' when all you need is a basic slicer with a nice thin edge. Right now, I am using a Ruike P108 in 14c28n, and find it to hold a good edge through a lot of cardboard(at least for the way I use it).
 
The problem with BM is that they run their steels a little soft. It makes for easier sharpening, but edge retention suffers. Their 154 CM is especially soft, and I have dinged up a lot of blades pretty badly because of this, whereas harder blades do not ding so easily. I finally bought one of their D2 knives because of this issue.

Of the stuff we’ve seen tested so far, Benchmade has been low on 3V and 20CV, plus .3 below range on one S30V sample. There have been tests that haven’t hit the spread sheet, yet, with their S30V in range, and their M4 hit at 62 and 64.5, iirc. 154cm hit at 59, which is in range.

In-range 154CM, CPM-154, or RWL-34 (well treated to land 58-61) are generally eager to sharpen or strop back. They’re not chemically predisposed toward extreme wear resistance. Great stuff, imo.
 
cpm20cv is similar to m390 , technically it should be better then s30v , problem is BM usually keeps heat treatment on softer side ( probably to prevent chipping and warranty repairs)
154 from BM usually really soft , all those steels could be good if heated treated properly .
20cv also less forgiving during heat treatment so I am not going to be surprised if s30v outperforms 20cv after BM treatment .
