I believe the answer may lie in ignorance. And remember, ignorance (lack of knowledge) can be cured by education.
Example: I used one of these, off & on, beginning at about the age of 7, down the hill at my Grandpa's house in Minnesota, . Then I began to learn learn better ways to sharpen.

I would actually like to have that grinder. It could be useful. I wouldn't use it to sharpen though.I'm thinking swedges or re-profiling old blades.
I expect they are trying to sharpen the edge and it skates across the flats .... in the case of bench grinders they skate the flats against the wheel ..... with A Dremel tool they decide to use it to remove a carbon spot and it either skates or leaves a nice deep divot. It must be fairly easy to learn how to do all that, as I have seen endless instances of their magical talents.![]()

Your Northfield has some excellent gnarly stag and seems to go well with the little horny toad you captured. A feller could get stuck by that little critter ....... ouch !
