A 2012 Pioneer Bone EC 2 Blade SS Scout (735212) to use as a food prep knife is my next one. I really like the Bullnose/spey blade for that work, and the skinner blade will be used for eating. I like the 1095 steel, but it does impart a flavor to acidic foods. The 440C should eliminate that issue.
