What's one fixed knife and one folder that every enthusiast should own least once???

Opinel, any model really. Probably not for everybody, but certainly worth a try.

As for a fixed blade I'm gonna have to say, a practical Scandi ground blade of a sort, as cool as the #1 Mora is I dunno if it's as useful as, say a more utilitarian 711 Craftline or Clipper might be. Very useful knives IMHO, for about anything really. Then again the #1 has been in such widespread use for so long it's hard to make an argument against it, as for me though I like the Craftline.

If a friend asked me which folder and which fixed blade he should get if that's all he ever wanted to spend on knives, I'd suggest a PM2 and Ratmandu. Not cheap, but they cover the most ground collectively with little overlap.
 
Simple... everyone needs a Buck 119 'Special' and a 110 'Folding Hunter' - totals <$70, inc s/t, for both of them from WallyWorld, etc. Utilitarian, affordable, and available. Smaller and a bit harder to find would be a Vic SAK and a Mora 'Robust'.
