Ribeye in the store have been extra nice and thick lately. I pulled this one off a little too early last night. Took a few slices from the outside and threw the center back on for a few minutes.

Started some white bean soup in a crock pot this morning and just stopped for lunch. One cup white beans with a 1/4 tsp of Consommé chicken bullion, salt & pepper, garlic, lemon juice, and olive oil.
 
Woodworking project I completed last week. Bought an Ooni pizza oven a month ago and have been dying to use it.

Today it was one red bell pepper, one sweet onion, two carrots, 1/2lb ground beef, 1/2lb ground pork, three ripe tomatoes, one can fire roasted tomatoes, 1/2can tomato sauce, old red wine, pesto, soy, garlic, brown sugar, Tabasco, balsamic glaze, capers, curry, herbs Provence, bay leaves, salt & pepper, cheddar, mozzarella, cottage cheese, and parsley.

The day started out pretty good with 4 sticks of butter and some bacon grease.

Ended up even better with 7 dozen ears of fresh sweet corn cooked down to maque choux. It’ll be bagged and frozen for a solid side dish or the starter every time I make a beef & vegetable soup.

My god. I just love that. Can you detail your method a little more? I only do corn a few times a year because the wife doesn’t like it unless it’s “corn bread” from a box. 😭

I don’t follow recipes but it was basically:
4 sticks of butter, 7 dozen ears of fresh sweet corn cut off the cob, 4 diced onions, 6 diced bell peppers, couple tablespoons of roasted minced garlic, 3 cans of diced stewed tomatoes, S&P to taste. Cooked slowly for 2 1/2 hours stirred about every 3 minutes.

Awesome. So you cut the raw kernels off first, then stir them around with bacon grease, butter, mixed veggies, garlic, etc in the heavy pots? Sorry for the dumb questions-I just never did anything elaborate with corn before and this looks so dang good! I’ve only ever boiled the whole ear, then cut the kernels off, butter and salt. I’m going to try your method this week!

Yes, just be careful cutting the kernels off the cob. I try to cut the whole kernel off some like to cut the kernels almost in half then scrape the cob with the back of the knife to get somewhat of a creamed corn effect.

However I cut it will be mostly by accident I’m sure. I’ve never cut raw corn before. I’ll probably shoot for mid-week and make a pan of bacon and get some BLT going. 😋
 
Back but not stuck in Lodi again . . .

Photos of brunch yesterday at Wine & Roses (French press coffee, orange juice & a "salmon scrambel"-- eggs topped w/smoked salmon) with a view out the window towards the patio which was too noisy/crowded for me and a glass of rose (post brunch) at the Lodi Wine Center nearby.
