Just an FYI, but both papain (from papaya), and bromelain (from pineapples) are used as meat tenderizers, as they're both enzymes that break down collagen.

They're not simply about adding moisture/water.
Right. I've used orange juice as a tenderizer, but never thought to inject the stuff.

Dang it! Now I'm hungry! Lol
 
The wife cooked today. All I did was go hunting at the grocery store.

There was probably a quarter stick of butter on top of that chicken. Stuffed with apples, carrots, and celery. Lentils and rice. Cheesy broccoli. Her flatbread and hummus I could eat every day though. We’re just snacking and resting today.
 
New Orleans trip this past weekend to see Bert Kreisler’s comedy show and do New Orleans kinds of things.

First stop Acme Ouster House wife had char broiled oysters and I had a shrimp poboy.

Wife had a seafood courtbouillon, I had a double cut pork chop(which was misrepresented because it was more than 3 ribs thick!) and collard greens.

A 10.5# slab of brisket that I just bought from Costco.

Going to make corned beef w/the point, Texas style chili w/half of the flat and maybe BBQ the rest of the flat.

We're talking about at least a 2-4 wk project. The chili will come 1st. ;)

I've never used papain or bromelain for tenderizing meat but I've got both in my medicine cabinet to use to reduce farts.

They both work but I find papain more effective than bromelain for this purpose. LOL! ;)
 
I always forget to check my freezer before buying meat in bulk on sale.

Just bought 5# of 80/20 hamburger for $1.97/# but still had 6# of hamburger in the freezer. LOL!!!

Don't make meatloaf often but needed a way to make use of some of the hamburger, so I made 2 meatloafs (baked 1 & froze the other) w/2#'s of the stuff.

Not much to look at. Looks dense but its actually pretty light (lots of veggies & bread crumbs in it) and tastes very good w/the honey BBQ glaze that I put on it. Now I gotta figure out what to do w/at least 4 more #'s of hamburger to make room in my freezer.
