What's that you're eating?

Visiting my daughter in south Austin! We did get to say hello to Aaron Franklin yesterday. Trying to plan our attack on some brisket breakfast tacos or sandos before we head north for the I-35 shuffle back to Dallas. Any favorites or suggestions? PS I love a coffee shop with kolaches and house beer on tap. Reminds me of old weird Austin in the best way! View attachment 3113156
The best breakfast tacos are at Texas Honey Ham in Westlake (I know, an unlikely spot, but trust me: an internet stranger). I imagine you've already found others by now.

Just marinade your cut up chicken for 24-hours in it! Sounded gross to me and I like pickles. I used peanut oil, suggested, in the Fry Daddy.

Today's dinner is the result, along with some onion rings and fried pickle chips ...

Cheese enchiladas topped with carnitas and fajita veggies, finished with tomatillo sauce. From a great local restaurant where it's hard for me to understand most of what's going on.
Those restaurants are usually authentic and the best. As a gringo ... Mexican food is second to none. I could eat it everyday. The best Mexican restaurant around here is a little dive that doubles as a Latin Food Store. The store owner's 85 year old abuela turned me on to her homemade tamales wrapped in banana leaves vs corn - they are my go-to tamale now!

Those restaurants are usually authentic and the best. As a gringo ... Mexican food is second to none. I could eat it everyday. He laughed and said, “No, I just make it myself from fresh vegetables we grow ourselves, using my own recipe, passed down in the family”.

It’s crazy to me that back in the early 80’s here in the Denver area, Mexican food was only just gaining traction. I remember pretty vividly the first time I had fajitas and enchiladas. It seems like all the sudden, in ~’82 the restaurants just started popping up everywhere here.
 
Haven't posted any food pics for awhile. So, here are a few of the prep that went into yesterday's gravlax & scrambled egg breakfast.

Bought 2 salmon filets & cured them w/a layer of whole dill & a rub of 3:2 sugar to kosher salt mix on both sides in the frig in sheet pans under weight for about 36 hours:

They're now gravlax filets which look like this after getting cleaned up; vacuum packed 1.5 of the filets & put them in the freezer. Kept the other 1/2 for use in the fridge:

Here's the prep set up for breakfast -- already sliced the gravlax & the scrambled eggs w/sliced green onions in them are ready for the pan:

And breakfast is served with a small bowl of dijon mustard, honey & chopped dill for a topping on the gravlax & a dolop of ketchup & hot sauce for the eggs:

Reminiscent of my glory days working @ Taco Bell (1985) and the fat ladies that would order a Small Diet Pepsi and a party pack (dozen) tacos for lunch, if I were to drink just a small cup of water I could eat that whole damned thing and still look dead sexy this summer in my mankini using the same logic as those taco woofin' women @ TB.

Found these food pics buried in my phone from the past month or so . . .

The 1st is a early dinner that I had a Il Fornaio (an upscale Italian restaurant chain in the SFBA) the night before my annual LEOSA qualification session:

It's a trio plate of 3 difference pastas (Rigatoni ala Vodka, Gamberetti Shrimp & Pistachio Pesto & Tagliatelle Boglonese) with a pint of IPA (don't remember the name but I always order an IPA).

Had to pay for the bread on the side & went thru a couple of servings of it that came with a EVOO & balsamic vinegar dip.

The 2nd is lunch at a local beer bar where I had a couple of glasses of Pliny the Elder with a Pepperoni Flatbread. Was still hungry after I finished the flatbread & also had a polish dog & a bag of chips before I left the joint. ;)
