I'm talking rock bottom price range here. Like say under $30.
I'm gonna go with MTech. I have a couple that are pretty damn impressive for the price.

Mora, opinel. Most of their knives are well below $30 (many are $15 or less).

Those are the only two I can think of that are consistently below $30. And Mora has a few outliers now, so that's iffy. Svörd is great, but really only the peasant is that cheap.

if I had $30, I'd pick up an Ontario Rat2, or a Utilitac2. Either that, or a Buck 110, or maybe a used Cold Steel something or other. Mtech? I'll pass.

I've got a buddy at work that swears by the cheapest Walmart knives he can find. Like $5.99 or so. I remember a thread here that discussed these same knives. Personally I have a Gerber LST that is over 32 years old. It served me well for many years. I carry other more expensive stuff now, but still have the LST.

In the fixed blade world the Cold Steel "lite" knives are pretty good, especially the Pendleton Lite Hunter.

As far as traditional folders, the Chinese-made Bucks.

Modern folders, I like Byrd and some Kershaw.

All of the above suggestions are excellent, in my opinion, with the exception of MTech. I would add Enlan and Ganzo to the list. People often have strong feelings about Ganzo knives, but hey, they produce decent and inexpensive knives. Because of a Ganzo knife I bought, I am now in the market to buy a Benchmade.

I'm going to give a shout out to Camillus..... they have a wide range of sub 30.00 knives and I own more than a few of them, they have all been exceptional and tout much better quality materials than most knives in this price range.
Aus8 is their preferred steel, which served Cold Steel and others well for almost a decade...its good quality steel and they heat treat it right.... G10 handles rather than most folks fancy plastic, some with carbon fiber, titanium coatings have held up on my EDCs for over 8+ years of literally every single day carry and use... I like em, I don't think they get the credit they deserve, but they work for me.

My first thoughts are traditionals like Opinel and Mora. Victorinox also has very affordable options.

For kitchen knives that would be Kiwi and KomKom knives, both made in Thailand.
Very thin blades made from well hardened (but unknown) stainless steel that takes & holds a screaming sharp edge.

Traditional- Rough Rider
Fixed - Mora
Machete - Tramontina
Folder - Buck Bantam, Kabar Dozier or shoot, shoot, I'd take another <$30 Schrade or Boker Magnum over MTech

I got an Ontario Rat 1 with d2 steel for 35.00. Seems like a bargain. Well made.

$5-15 Opinels, Victorinox, Hultafors, SanRenMu
$15-20 Mora, Enlan, Ganzo, KaBar, CRKT and Cold Steel fixed blades
$20-30 Byrd, Ontario, KaaBar, Kershaw, CRKT and Cold Steel fixed blades
