Another vote for Spyderco Mules. Not only are they in some very nice steels but the leaf blade with the gentle sweep is a terrific cutting machine. It's extremely versatile, comfortable, ergonomic shaped and there is steel choices for all occasions. The knives are heat treated for performance and aren't really held back for beginners. The steels are pretty much in their sweet spot. Not max hardness but not low either. Example is the Cruwear at rc 62. Excellent wear resistance and still very tough. It sharpens like a dream on my DMT diamonds without much burring if done properly. It exceeds my Dozier D2 at what it does best, is tougher, more wear resistant and gets the nice savage edge that is so good on meat, skin, rope, etc. Not as corrosion resistant as D2 if that's an issue. I have more than one set of Halperin grips but if I had only one set it would be easy to replace them on whichever version I need ( with the exception of the first in 52100. All others to the same standard)
Second choice is a Blind Horse Knife Long trail 3 inch O-1 @ rc 60 flat ground model. The large canvas micarta grips keep my hands secure and not cramping up during hard cutting. It's an excellent knife that really gets the best out of O-1. Great stuff.
