I do like to carry the little tear packets of Tabasco though. I always have a few in the same pouch with my anti-biotic ointment in my neck pouch:thumbup:

We use a lot of cayenne as well. Great with honey in hot chocolate before sliding into a sleeping bag.

Daves Insanity sauce is good,it comes in different levels of heat.Start out with a few drops and work your way from there.Venom is another good one,another habanaro extract based sauce.Me and the Wife use alot of red pepper also.
 
Cholula Garlic is a favorite. If I'm crunched for space/weight, I bring Sriracha. Either way, I dehydrate them a bit to reduce their volume.
 
my own mix of finely chopped raw garlic, heaps of Wasabi powder, many different hot peppers + chipotles, all smoked with a plumbers torch, bottled with sea salt and apple cider vinegar.
 
When camping I use my own spice blend of red pepper, black pepper, garlic powder, onion powder and MSG. My blend is heavy on red pepper and garlic.
(Omit MSG if paralysis results.) I recycle my empty spice bottles to carry the spice blend. This mixture is also useful at home.

At home I prefer to use original Tabasco at breakfast and Tabasco Chipotle
or Kroger's Extra Hot Sauce for dinner. I keep a bottle of Tabasco Chipotle in the 'fridge at work. (A buddy from East Texas once said that it was illegal in his area to eat eggs without original Tabasco. So, I been law abiding ever since.)

I prefer a subtle heat. The kind that lets my mouth know that I'm eating seasoned food without being intrusive. Five minutes into the food I should be able to feel my metabolism raising, the wonderful hot pepper endorphins kicking in and my brow starting to get damp. I once taught a Chinese restaurant cook how to cook what I told him was Chinese Tex-Mex and he did it mighty fine. Since he moved on I stick to my own cooking.
 
When it comes to sauces I like the do-it-yourself approach. I have a tasty homemade bbq sauce that I modify with extra cayenne and habanero, and cut back on the brown sugar and honey, to make a hot little number. The heat build slowly but firmly. Makes both my mouth and my eyes water.
 
I'm lovin' these homemade hot sauces. I've done a couple simple ones myself.

My quick homebrew is:

1 cup Apple Cider Vinegar
1 scant tsp salt
1 clove garlic smashed
8-12 fresh serrano chiles. (Or other fresh chiles: pequin or jalapeno.)

Stuff serrano's in a small jar. Heat first 3 ingredients until boiling. Pour boiling mixture into jar with serranos. Let sit for a day or two. Ready to use.

Tried a bunch, most are good. I like the habanero based ones best as they have a flavor I like - some others are just "hot" to me. The habanero tabasco has become a standard "go to" for me.
 
That's the key, I think, is the flavor. Just hot doesn't do it for me. That's one of the things I like about sauces like Tapatio: they have flavor, not just melt your fillings heat.

Definitely true. For me a good hot sauce has flavor and heat. Helps wake my mouth up and adds to the food. Plain heat, like Dave's Insanity doesn't really do anything. Habanero sauces are great because they bring both a nice fruit flavor and some serious heat.

I'm a big fan of Melinda's XXX and XXXX sauces.
 
if you want intense flavour, (DO THIS OUTSID OR YOU WILL GAS YOURSELF!) heat up a frying pan (dry, no oil) and drop in your habernaros and other dried peppers. ROAST them until well smoked, then thro into the blender and grind to a ultra fine powder.

next fill up a saucepan with wild turkey boubon and, heat up and simmer the powder down to a very thick sauce. Add salt, finely diced onions, whatever else and spoon into a jar. Add enough vinegar to make a thin paste

Yeah, I agree: it's the combination that does it. I had some hot sauce in Thailand that blew my mouth apart and made it difficult to breathe for a couple of hours. Foul, nasty stuff with no flavor—but it sure was hot. A week or so later I tried some at another restaurant/stand that, while not as hot, had the best flavor of any sauce I've ever tried. I think the first one was recycled napalm. Not sure what the second one was, but I'd sure like to find some here.

I cant say I have ever taken them on serious backpacking trips, but they come along on every camping trip.
