Which knife is better?

I have a grey caly jr. Not exaktly ansvering your question but the bladeshape of bouth the knifes you ask about is realy good for lighter duty. Edgewise they are supriour cutters.
 
I would go for the ZDP Caly 3 personally.

On a personal note, when traveling I shave with my UKPN. Really there are no bad choices in the models you are considering.

I was so close to getting a UKPK, but I really wanted the Caly 3 ZDP the whole time so I went Gold and sold a few knives to afford the ZDP Caly 3 and a Endura Wave SE.

I have used a pocket knife to shave while travelling as well. It got pressed into duty because the name brand 3 blade disposable I was using was mangling my face. I pulled out a Small Sebbie that had be Krein reground and re-heat treated by Phil Wilson to a proper hardness for S30V. It actually completed my shave (2/3 of it) without a nick or razor burn. I knew the sharpening OCD would pay off!

As for the Caly 3 vs. UKPK, I have only used a Caly 3 and the unbelievable smooth action makes it hard to fathom that you are using a mid-lock. I think I would be almost equally happy with a UKPK unless whittling like the OP intends (though the half stop would still probably save any pain, I wouldn't want to be cutting with my finger out of the choil), but I personally prefer VG-10 to S30V. As Doug said, go ZDP if you can. It takes a very sharp, acute edge and holds it a really long time. ZDP is hard not to like!
