The Buck Vanguard and 103 Skinner will stand well against any production knife for field dressing & skinning. Plus, they can be found in the up grade steels. I've used the 103 for years and love it. A 119 works well for quartering an elk but these other two will do a deer. Then use a trailing point kitchen style knife 6-7" for further processing. DM
 
As I mentioned earlier, the Vanguard is very hard to beat for an all-around hunting knife. However, the Queen Lite Hunter knives will also be good. In folders, I use a SAK Hunter XT for the gutting blade but plan to try a Buck 110. The 110 is probably the perfect deer dresser in folding knives.

My favorite that newer knives can't move out of my pocket or of my belt is a belted Schrade 125ot with a Schrade 34ot in the pocket,but on rainy or snow days a Buck 317with a 303 in pocket.Now my favorite fixed blade especially for Moose are Anza,Olsen,Marbles and Schrade Sharpfinger for which I grew up with,
 
Though I m not a hunter, I know the Cold Steel Ultimate Hunter is promoted as a good hunting knife. I have one and can tell you that it is very well made. Strong and light with a great blade.
 
Since nobody has mentioned it, the Spyderco Moran is a very good hunting knife. It is not a full tang knife, but it does very well in the field using.

Just ordered a buck vangaurd and a 110. Will try both first dog season. Ill order a few more to try second season
 
Chance83: You did well! They're both great! I like a 3" blade for hide removal but found my Vanguard could do it all well. It did well field dressing but also boning and trimming. It was great skinning too, but I don't use a knife much for that job. It's mainly hand work. Though I prefer a small finger guard, the big one on the Vanguard doesn't hinder the work and was excellent for reaching deep into the deer where I couldn't see my knife and cutting off the windpipe.

Consider a Bradford Orwell in M390 with a BuyBrown Sheath. Nice sized functional knife in excellent steel, with a good blade shape and a sturdy but not too sturdy grind.

I fully agree with this statement especially with deer I carry a fixed blade only to split the pelvic bone and cape them,then a Buck 303 or a Schrade 34ot size stockman to gut a deer.
 
One thing deer hunters need to realize is there's no sense splitting the pelvic bone, especially in the field. It just lets in dirt and is not a task for a hunting knife. It's kind of like bowhunters who still slit a deer's throat after finding it dead. There's no reason to do it.

I think you made a good choice for an economical hunting knife. I was never a big Buck 110 guy (have a couple however) and favored the old Schrades over them. Probably had something to do with the Buck steel hardness back then. I picked up a Puma SGB Elk Hunter with a stag handle. This is Puma's budget line. It would be a pretty nice blade for deer hunting or larger game (under $100). The fact that it is reportedly assembled in China turns me off a bit, but it still is a pretty nice blade.

Hmmmm Joe,don't ya think it makes it easier to disconect all the plumbing and easier to clean up that area with water alot of times it's a two or three hour drag to get the deer out of the woods.
