Don't do it, man!!!!!! A number of years ago, I had some redneck at a show decide that a couple of my big knives were sharpened too "thin" and needed a more durable "working edge".....so he proceeded to whack off the convex edge on my Sean McWilliams fighter:grumpy: If you are going to use a service, find out who sharpens the knives for the most expensive restaurants in your area. You have a better chance of getting a quality job done using one of those guys than somebody at a gun show.I've seen a guy at the local show sharpening but I want to KNOW for sure the guy is gonna do an EXCELLENT job and stand behind his work before I let him have a whack at a $500+ knife. I don't think I'd get that from the guy there. YMMV
