I obviously can't speak for anyone else, but I think we all tend to have one or two makers that we prize above all others.
Why? I think there are a number of factors that influence us, and those factor are perfectly valid. They might include overall design, steel, price, workmanship, reputation, the influence of hype, what we're used to, etc..
I know that, for me, there are a number of factors that enter into it. I'm an old guy, and I've been through a lot of knives in my time; some I've liked, some I've loved, and others that, well, I didn't love so much.
There are companies whose knives I would buy again and again, because they work for me and, more importantly, because I like the way they do business. There are also companies whose knives I would not buy even though they may have some designs that I like simply because I don't like the way they do business.
Like many others, I've pretty much settled on just a couple of companies that I like for a number of reasons and I'm content with my choices, at the moment. For fixed blade knives, I like Becker/KA-BAR, ESEE and KA-BAR. Folders are a different story, since I'm not really a folder person, but I do like Victorinox, KA-BAR, Buck, and I'm looking at a couple of others.
I wish I had the money to try a lot of different manufacturers knives, but I don't. I'm happy with the choices that I've made, though, and that's what counts to me.
