I was staring again today at the French knife you posted last week. Such attractive wood (olive wood is my guess) and an unusual blade shape that reminds me of a Taramundi I got in Sevilla, Spain:

The only timber-clad knife I'm carrying this week is Valley Jack, my 2019 desert ironwood Guardians Lambsfoot lit up by late afternoon sun last fall:
