Thank you, Gary, yes it is olive wood..... I've developed a fascination for it and it even has a light, refreshing scent to it. Many French knives seem to have the almost blunted, non threatening look to it, yes, similar to your Taramundi. Interesting to me because a lot of Spanish knives are very aggressive in appearance. I wish I could say that mine were obtained near their city of origin, but it was a few clicks of some buttons and lots of hard work by delivery people!Belated thanks for your kind words, Steve.
I was staring again today at the French knife you posted last week. Such attractive wood (olive wood is my guess) and an unusual blade shape that reminds me of a Taramundi I got in Sevilla, Spain:
