Wouldn't this take the fun out of sharpening ?

I can't disagree with you that grinding belts and CNC machines are better than sharpening freehand. But at what cost and what level of practicality?

My comparison with belts and CNC machines are about modern knife making, not for sharpening.

Personally I only regrind knives with major damage or significant work required on belts, I don't use belts for regular sharpening at all. I do all of my sharpening by hand, and mostly with guided systems.
 
A paper wheel setup is easy peesy and produces a wicked sharp edge in no time. I'm sure there are people who agree with me and people who disagree. A better mousetrap? Maybe. I don't see any advantage though as I don't feel anything is lacking. Freehand for portability. I always have my folding dmt in my pocket.
 
I know I can maintain a knife losing less steel with a guided sharpener than freehand, because guided is so much more repeatable.

Heat is a real issue with paper wheels.
