You told me what handles and blades, NOW tell me what steel

Yeah, I'll throw my 2 cents in the 1095 camp, one of my favorite steels, good basic high carbon. The patina is part of the charm :D
D2 is a really nice steel too, I've never had the problems with sharpening alot have complained about.
Not all that big on stainless in a traditional blade, but if it's the manufactorers choice, so be it. 440C is indeed a fine steel, and any of the current wondersteels are ok.

1095 , D2 , CPM154 , CPM D2 perhaps.

something in a stonewash finish would be nice as well , though I am sure that thread is coming next...what finish :)

Sorry, the stonewash finish is done in a huge vibratory machine, our budget will never run to that. Mostly we will be turning out handdone satin finish with once in a while a mirror or hand rubbed finsih.
 
Another vote for carbon steel -- 1084 would do just fine. I'd also love to see 01 or A2. You also can't go wrong with 52100
 
My expererience with older production slipjoints in 1095 has been good. I am definitely in the carbon steel camp. A2, D2 would work, too.

Nothing fancy, just tried and proven D2 @ HRC 61 for folders and skinners.

Differentially heat treated 5160 for choppers.

(Also a line of knives in O1 would be excellent! But must be hardened to HRC 61.)
 
1095 Carbon will always be my favorite, it works, its proven and I like to go by the old saying "Keep it simple stupid" :D

I prefer 1095, and 01/L6 Damascus for high carbon.
for Exotics I like Stellite 6K...but boy is it hard to work!
 
D2 for most folders, 1095 for some, depending on what it is being used for. I have developed a new appreciation for carbon steels, but am still lazy enough that I like stainless steels. I would also consider Mike Stewart for custom edges.
 
Good old carbon steel for me, W2, W1, 1084, 1095, 01.

I have a few but will never buy another slip joint with a stainless steel blade.

I do not understand this list? thing, never having seen it before.

I am happy to see A2 showing up again and again on the steels you like. It has been a favorite of mine for almost 60 years.
