For backpacking, a Basic 7 and a 3-4" blade folder such as a Carson Model 4, Strider SnG, Spyderco Millie or Emerson CQC7.
For any other camping scenario such as using pack animals or 4WD vehicle to get to the campsite, I'll second PeterPHWS' endorsement of the S5LE, and I like his modification of grinding off the little point above the plunge. Haven't gotten around to modding mine, but here's his:
And the second blade (plus a folder, which I always have on me anyway) would be, hands down, an NMFBM for chopping/batonning/etc. rough chores--much better than any hatchet IMO because it has a much longer "sweet spot" on the blade, meaning you don't have to aim to hit what you're swinging at as with a hatchet, and it's a much more efficient splitter/batonner IMO than a hatchet head:
In a vehicle-camping scenario, I'd also have a machete and an axe to take care of any lighter/heavier chores outside the efficiency range of the NMFBM. IMO, a machete is more efficient for sub-2"-dia. branches, and an axe is welcome on larger stuff like large downed trees across a jeep trail, just because you can use two hands and the longer shaft to land an axe head with a little more "umpff". However, the NMFBM is still useful in these situations if you're without a machete or axe.
Edited to Add: S5LE all the way for day hiking, plus a folder. Replaced my Basic 5 in my daypack. Super light, strong, great utility size and even big enough for light batonning if you need to build a temporary shelter or split some wood for a fire.
