Thanks! The stag handled knife is from France, by Stephane Thomachot. The knife is a Langres, named from the town the style originated in. The steel is XC75 carbon. Here is a picture with the blade open:

In the "Traditional Folders and Fixed Blades" forum, there is a thread on page 6 (I don't know how to link to it), called "Stephane Thomachot", who is the knife maker. The thread was started by @Âchillepattada, who has a wonderful collection of French knives. He has some threads about other makers, and also has posts about French knife shows. Lots of beautiful stuff. @Jolipapa also has much knowledge of these knives. They are both from Paris or the Paris area.Thanks, the open knife pic made my day, very nice and a little infomon a French style I had not heard about. Different that's a Laguiole. Any place where we can see more of these?

Thanks, what is the handle material? The makers mark is an Eye, so is it Eye Brand? I can also see the word Witness.
