To open green coconuts with a knife you have to slice off the top of the thick green husk. Thick knives bind up in this stuff, you want a very sharp thin bladed knife. Once the top is sliced off you pierce the center, for that you need a decent point. I have found the Stainless Moras do a great job. Thicker knives like the Pilots Survival Knife and the BK-7 are much more work to get the job done.
I've already answered the OP question. I am setting up a set of tools for this kind of environment. Two tools I would love to have along would be an actual coconut tool and a clam knife.
Coconut tool. You shove it in and twist to cut a clean hole through the husk for drinking. It's quicker than pulling a cork. Mac
