Your favorite blade steel

For folders: ZDP-189, keeps an edge forever and its very stain resistant.
For Fixed: Stainless: VG-10. Carbon: O1, D2, 1095, A2.... basic carbon steels are easy to sharpen and hold an edge well, O1 and 1095 need a bit of up keep though...

Huh... I thought zdp stained as the chromium is tied up in carbides? I've seen it patina anyway.

I'm very much looking forward to trying cpm m4. I just wish Benchmade didn't cerkote it. Looks cool uncoated and all that.

Also, besides the Southard, are there any other popular knives in 20p? I want to try it, but I haven't decided if I want to keep the Spyderco yet, so I won't use it. Anyone know what the Rockwell is on the Southard? Never seen that spec.
 
1095, O-1 and 52100. I enjoy sharpening these steels and I love the super fine edge I can get on them.
 
For EDC, I'm a fan of VG-10 & 154CM. No, they're not tops for edge retention, but you get easy sharpening, and wicked edges.
 
I've been looking for good 1095 kitchen knives. All I've seen are old hickory. What brand would you recommend? If they're not custom. Thanks

I have a set of Old Hickory knives that I bought at a Goodwill store for $9 with a block included. (7 knives) Would not trade for them. If you can get a set, jump on em, you wont be disappointed.

Since most of my knives are "slip joints" I prefer 1095 in the older Schrade Walden's, Case, and some old Barlow's. Love the way they sharpen up and retain their edges.

I haven't gotten to play with many but I have a bit of a thing for AEB-L. Sorta like a simple steel without the rust. Gives up some edge retention for a finer edge and ease of sharpening.
I never have been big on edge retention. I would rather frequently sharpen a knife that's a joy to sharpen than occasionally sharpen one that's a pain.

That's CTS 204P Steel, that's comparable to Bohler M390.

Rockwell should be in the 60 range.
 
I maintain that 52100 is the best steel in the world, but it might just be the most corrosion-prone steel in the world, too.
 
CPM-3V & INFI on 7"+ fixed blades

CPM-M4 & Elmax on less than 7" fixed blades

M390 & ZDP-189 on folders

I've had 1095,52100,5160,A2 on production & custom fixed blades & they were all good too.

For the lower end stainless I like AUS-8A & 440C for their ease of sharpening & ability to get to a very fine edge.

I am still amazed at H-1 for it's stain-proof capabilities.

It's too hard to pick just one or two.

eta:I can't believe I forgot about S7.I absolutely LOVE S7 for a large camp knife/chopper!

For many years I was satisfied with the 1095 from Schrade USA models, the CV and SS from Case slip joints, and the 420HC from Buck knives. Then about ten years ago I got some knives from Queen that had D2 steel, and I pretty much quit using all the others in favor of Queen's D2 blades. That D2 held an edge it seemed like forever. Then last year I got some M390 blades from Spyderco. They hold an edge as long as D2, if not longer. But, the M390 seems a bit harder for me to sharpen. Then I got a Gayle Bradley in cpm m4. And, I fell in love with the steel. It holds an edge much better than my D2, and seemingly better than any of my M390 blades. I was in love. Now I have several cpm m4 blades, mostly from Benchmade. I find the m4 much easier to sharpen than ANY of my M390 blades. It holds an edge seemingly much better for my uses, which include some pretty hard use in the garden, yard and garage. Initially, I didn't like the coatings of the Benchmade knives with m4. But, after some use and the coating wears off they gain some character. I live along the Gulf coast. And, I've not had any trouble with my cpm m4 blades rusting at all. In fact, they haven't even patina'd much, just a little hear and there. I absolutely Love cpm m4.
 
I've bee pleasantly surprised at the hair poppin edges I've been able to make, and retain with 8cr13mov. I understand its a lower grade Chinese steel, but I've had equal results to sandvik. I've become a fan ;)
 
So far my favorites are INFI, SR-101, CPM-3v (Fehrman), and Rowens 1095. For fixed blades that is , Not too big on folders.
 
ZDP-189, S110V and Elmax are good choices for a folder. VG-10 gets wickedly sharp too. 1095 or D2 on a fixed blade.

Steel choice isn't super important to me, as much as the design of the knife. I know that any reputable maker or company should have a good heat treat on their products.

What I am going to use the knife for decides the steel I want. I'm a big carbon steel fan, but I do appreciate the various stainless steels in certain applications.

Force me to pick one, it will be 1095. Fabulous edge, holds it well enough, and can sharpen it on anything. Stainless, well, Mora works wonders with it's 12c27 at 57-58RC, it performs much better than you think it would.
 
zdp 189. far outperforms s30v or cpm154, can be had in a knife with the same price. also teaches you how to really sharpen a knife (the hard way.)
