CPM 3V is my favorite for general purpose use. It's incredibly tough and durable, takes a fine edge well and works well with a toothy edge, holds an edge fairly well, is easy to sharpen and maintain, takes a variety of finishes really well, it's corrosion resistant enough that I don't have to worry about it much. I really, really like CPM 3V as both a user and maker. As a go-to, general purpose steel it really shines in my opinion. That said, for some specific applications there may be other options that perform differently and are better optimized to special needs.
