As a certified knife knut, my obsession with fine cutlery has led me down the rabbit hole of sharpening.
Im using a guided system with strops and have been getting excellent results as my technique has been improving.
I was elated this evening to find that my latest knife purchase, and freshly sharpened knife is BY FAR the sharpest I have ever had.
I was able to cleanly push cut toilet paper tonight. Not the TP you would find at a turnpike rest stop either, we are talking about the kind that make you think you're sittin on cloud 9...
In my experience, the softer and more "plush" the sh!t ribbon is, the harder it is to cut it cleanly. This stuff generally likes to tear and not cut.
Only a knife guy would have studied TP and how it cuts!
I wasn't on a mission to get to this level of sharpness, its just what my final result wound up at. Partly why I was so excited, I didn't really expect it.
The knife is a ZT 0562 in Elmax steel. I reprofiled the cutting edge back to about 30deg inclusive and then added a 40deg microbevel. I was after a good, durable, and sharp angle for EDC type cutting.
I post his because I am curious to see what your sharpest knives are and how you test them.
