I love that guy, his Japanese accent definitely adds to the appeal. He does not review as wide a range of knives as someone like NutnFancy, but there is a lot more info about steels and sharpening. He'll do things like show different knife edges under the microscope before and after different sharpening techniques are used on them.
I don't subscribe to Nutnfancy though I do sometimes watch his reviews when I am looking for specific info about a knife. I do subscribe to Cutlerylover, and I find Cutlerylover's channel more entertaining because his channel is more geniune. You never exactly know what Cutlerylover is going to post next, whereas with Nutnfancy it's more like a show and it's the same type of thing each time. With Jeff (Cutlerylover) his channel shows more of who he is as a person, and he isn't making videos in a show type format, he's just making whatever videos he wants. I find that more interesting.
Another reviewer I subscribe to is Knivesandstuff. he's a New Zealander and like Virtuovice, he is more into knife making and sharpening, although he does have a lot of reviews too. What I like about this guy is that he gets so serious a lot of the time, and he makes these very serious videos speaking in his New Zealand accent. He got so angry about Bark River for some reason that he took down all his Bark River reviews (which was the main brand he reviewed) and made a vid selling all his Bark River knives.
I know there are a lot of reviewers, not just Nutnfancy, whose channels are solely devoted to knife reviewing, but none of those channels have really clicked with me. I like channels where we really get to see who someone is and what their life is like, not just a review channel.
