semi dull kitchen knife. the thing that bothers me is that I eat steak on a porcelain plate (
ie. normal plate) and I get finicky about dulling a much better and sharper knife. so I use a knife from kitchen drawer.
 
The steak knives might live in the kitchen, but are not kitchen knives. They are only for steak. I know this because when I was a kid, I mistakenly carved a jack-o'-lantern with a steak knife. To this day, I diligently recall that a pumpkin is not a steak.
 
Of course I would use my beloved Daado Daado made kitchen knife in 15n20 steel! This thing cuts like a laser! Don't matter if it's a thin paper sheet, a succulent steak or an empty Monster drink can!

If we're talking raw meat, either my Spyderco Murray Carter Minarai Nakiri or a no-name meat knife my wife bought years ago, but is surprisingly a really good knife, gets wickedly sharp as well.

For cooked meat, we don't have any steak knives, so probably our Victorinox pairing/small kitchen knives. As someone above said, probably and easily the sharpest knives in our kitchen, Victorinox knows their stuff.
