    Z wear Gyuto, Slightly flatter profile, with the tip lower, shorter heel height.
    HT to 63 RC.
    This is a high alloy carbon tool steel. It has the added benefits of some corrosion resistance and added toughness, and best of all, better edge holding. This blade takes a great edge and lasts about twice as long as 52100.

    Length - 225 mm
    Heel - 46.5 mm
    Spine - .098 [2.5]
    Weight - 183 grams
    BP - just in front of the heel where your thumb and forefinger would naturally go for a pinch grip

    This is a weighty blade, stiff spine, but still passes through dense food well.

    The steel is very wear resistant and thus the finish is not done to a high level.
    This steel has a lengthwise scratch pattern to about 60 micron and fine scotch brite.
