The Boker Exskelibur 1 - titanium framelock that I just bought really does amaze me. I had the good fortune to handle one before buying. The knife checked off a lot of boxes for me for EDC - Very simple design, incredible lightness and thin handle profile, great blade shape and grind (one of the best slicing knives I have used), very good steel (S35vn), simple to take apart and service, and the front flipper works amazingly well. The price was reasonable as well.
One other knife that continues to blow me away is the Opinel series. I use the Opinel 7 Inox the most. I was skeptical when I first bought one years ago. It's design, wonderful ergo's, great blade shape and slicing ability, easy reliable lock ring and sharpening keeps me coming back to this knife. I remember as a kid my grandfather using these for woodworking decades ago, I had no clue about them then and am amazed at how useful a cutting tool the Opinel series has been to so many people all over the world for so long.
