The cheaper stuff from the grocery store is made mostly from corn syrup, unfortunately. Could make a difference.

Or perhaps, your body doesn’t do well with high content sugar products?

It's true I don't eat much sugar anymore, but I've recently started drinking one full sugar soda day again after hearing spooky stuff about aspartame.

I'd like to eat some french toast and pancakes with a clean conscience. They are awful without syrup - gonna give maple a try!
 
Well, it’s been below freezing consistently for the last few days, so no sap run.

Today jumped up to +10°C and the sap started to flow…

We collected 9 gallons of raw sap today and put it in with the frozen sap collected last Thursday. The frozen sap will keep this new sap cold enough until we collect enough to start another boil. :)

We had to make two runs. A 9 gal day, we’ll take it.

Coleman, have you attracted any bears with boiling that sap?

Looks pretty interesting and great yields so far, exciting to follow along with your journey there
No bears. No moose. One curious fox down the trail, but didn’t come close.

We had family (wife’s side) up for the weekend. Had some fun during the evaporation process.
Snowshoeing, snowmobiling and table games. Was a great time!

I got up early to finish off the boil for today.IMG_6853.jpeg

Got to get a good rolling boil going on around 200°F in the pan. That puts my barrel stove around 600-700°F inside. Need to get some thick steam coming off.

As we get closer to finishing the boil…the sap in the “boiling pan” starts turning amber and then darker amber. This is due to the sugar concentration getting higher. When the sap starts turning color, oh man oh man does it smell good in the shack!

So the “warming pan” sap is now all in the “boiling pan” and we fill the empty warming pan with snow and water so we don’t burn the inside of the pan.

Today was a low flow day as it did not drop below zero last night. I did take a couple photos of icicles for ya’ll.
