I've been a journey man for 2 years. Recently became a full time cutter.
Any other cutters here?
I love this trade. But I'm by far the youngest person at my place of employment.
I work with a lot of knowledgable people...
But it's a dieing trade.
And I think a place like this could really expand my knowledge.


Any other cutters/butchers here? I have a lot of questions

I’ve been in commercial refrigeration for over 40 years. 25 - 35 years ago I did tons of cutting rooms, low velocity blowers and gravity coils to keep the meat from drying out.
Each of these rooms had around 15 cutters cutting all day long.
Today??? I have 2 butcher shops employing 3 cutters each. Definitely a dying trade and it’s a shame.
You were very lucky to find a job. Hope it lasts.

You are right of course - I dont use my knife for getting food on the table every day.

Believe it or not, there are a few thousand actual people here ...

Most of them both like and use knives on a semi-frequent basis.
 
First off you used an industry insider term for butcher so no you want get much traffic with a post title like that. Second why the attitude and second post essentially blasting the community because they didn’t respond to you in a time window you thought they should.

I’m sure there’s plenty of members here that have had experience butchering. You will find the members on here very helpful if you are respectful and give them time, while many are retired even more of us work for a living.

There are a lot of us blue collar types on this forum who work with their hands.

That's a quarter inch steel re-enforced hydraulic line. I find it easier to take off one fitting to pull a blown line through guarded parts of my stone splitter

Now we also have many members who only cut food,paper,string, or boxes. Nothing wrong with that.

Their jobs aren't the same as mine, but they love knives, which is why all of us are here. This isn't "blue collar bladeforums".

Heckler and Koch blade?
They were quality back in the 80s.
They only put out plastic Euro-crap now. G36 for example.

They've never put out a quality blade. Glock has tho.
They actually started out making tractors and entrenching tools such as shovels and field knives

Like you said, "dying trade". There are many people here from all walks of life and from all over the world with all kinds of varying uses for their knives.
Some people are here more than others and at different times of the day. Like I said, maybe try some of your questions in the hunting forum here. I'm sure most of those guys have a lot of experience butchering game.
If you just wanna be snarky to everyone here...well, see how that works out for ya!:rolleyes:
