I've never been a butcher but I've processed many deer, hogs, rabbits and squirrels back when I had time to hunt. My knives skin more wire than wild game now days.That #6 awg might be a little tougher than your garden variety string.

On a positive note, you seem to be the the senior cutter. A relevant response will often take a lot longer than a few hours on this forum. Can you share the kinds of steel, or brands of knife you choose, while on the job? I used to drop off bread in one of those -40degree freezers and didn’t have patience for when someone didn’t follow the signs and just dropped off stacks wherever, because it was so $#&@‘n cold. Most doing your job in my area are undocumented and unprotected, unfortunately, and are mostly kept apart from the other workers.

Butcher is a old term.
I work for a huge corporation.
Cutter is the new term.
I sharpen all my own knives on the job. On a generic stone.
Maybe once a month.
I use a generic steel every day tho and my knives are All razor sharp.
Can you compare?
