If you really want to learn more about the knives and steels used in your trade, try checking out the correct sub forums. You are in the general sub, and most of this is comprised of EDC, Tactical, and traditional folder discussions. Check out some other subs related to your stated interests:

Maintenance & tinkering, for learning about sharpening various steels and other great tips for upkeeping nice blades:
https://www.bladeforums.com/forums/maintenance-tinkering-embellishment.794/

And we have a dedicated kitchen knife thread....this will house info on choppers, chefs knifes, and other blades related to your trade:
https://www.bladeforums.com/forums/kitchen-cutlery-tools.842/

Now for some advice: Most of the members that have commented here, while snarky, have tons of combined knowledge about steel, sharpening, maintenance, and the nuances of bladecraft you dont even know to ask about yet. Instead of trying to come up with witty replies, read up on your steels and tools of the trade. When you say things like you sharpen your blade once a week to keep it sharp....most of us strop on 3000+ grit compounds each night so our edges are sharp enough to split a hair. Its like trying to measure junk at a porn convention...you gonna lose with that approach:)

Welcome to the forums!

Is this the forum I come back to.
Ha ha ha ha

I'll leave on my own.
Knives are a kids hobby or a felons hobbie because they can't buy guns.

I have both. A lot of both. You are clearly here to troll so glad you will leave on your own. Best of luck in your future endeavors.

I know a few butchers. Our local butcher is one of the best around! Butchers are quite common in these parts. It's where you get your meat!

All the butchers I know are friendly, though...
My grandmother’s side of the family were all butchers, they were friendly too. Didn’t try to start pissing contests with strangers, either.

Bye, child who throws tantrums and heeds advice like a rock. Jeesh, newbs are on a being wrong roll, lately!

Don't run him out of town yet. I am in dire need of help with my industrial meat processing skills!:oops:

Funny man here.
Maybe I am a kid, maybe I'm not.
But what's a grown man doing on a Internet forum bad mouthing a kid?

So, you're a kid then. With an attitude problem that you just tried to cover up with the excuse of "I work with blades for a living and I'm from Texas". LOL Man, the logic bombs just keep coming, man I've missed this place. :D

Interesting logic. You are equating that a gun and a knife have the same function, and that if one can't get a gun, one buys a knife. So if people with knives don't have guns, do people with guns have knives?

I never said I was a kid. Maybe I am.
But why are you enjoyably fighting with a perceived child?

This kid has demonstrated two things very clearly to me:

1. They don't know much about knives
2. They aren't here to learn or even to have a real discussion

I'm not sure what the purpose of this thread is. Did OP actually have a question?

Reminds me of the hitchhiker from the 1973 TCM.

Thinking about it, one of my great uncles, who was a ‘Master Butcher’, taught me how to sharpen and steel knives. If I’d asked him about knife steels, he would have named two: carbon and stainless. He knew how to use ‘em, though.
