2, a REKAT sifu to stay out of sight, a tiny trapper with fancy scales to show everyone and clean fingernails.
 
2 folders clipped in my front pockets: BM Axis, and a Spyderco Delica, which I figure is a little less scary and I'm willing to loan out. Also have a Leatherman Micra on my keychain. I always have my Leatherman Wave in my bag, which I'm rarely without, but I don't carry it on my belt much anymore.
 
It depends on the number of pockets I have. A minimum of ~6 up to maybe 14; if I have enough pockets (and can keep my pants up !!)

Most of the time ONE worker. BM ascent or CS Large Clip point Voyager or Spyerco progrip or Gerber EZ out or SOG Vision depending on what I feel like. (I use leave the SOG for after hours only for convenience/ self-defense) I used to use a PECK all the time, now I don't. Sometime I carry a kneck knife also, it depends on the direction of the wind that day. And my Victorinox with the pen always stays in my car. Very Handy!!

1 Spyderco everyday. 3-4 on horseback, Spyderco, Leatherman Wave, Fixed blade, Woodsmans friend (till I get my Khukuri)
 
I usually carry two. A Spyderco Wayne Goddard lightweight in the left front pocket and an Emerson CQC-7a in the right when I am off duty. On duty I carry the same Spyderco in my left front pocket and an Emerson Raven clippoint in the pocket of my body armor. When I worked as a Narc I had one Newt Livesay's SOPs around my neck when being discreet was a virtue. Yes and I had a gun too.

Four usually. To answer why more than 1 blade:

At work:
-Mini AFCK for general stuff
-Calypso Jr Ltwt. for the razor edge
-Military for tasks requiring a longer blade
-SAK Manager or Manager 2 for the small phillips, scissors, nail file, tweezers, and toothpick.

Off work:
-Calypso Jr Ltwt.
-Military because I like it so much
-SAK Manager (or Manager 2)
-Starmate for the thicker blade

sometimes add one or more of the following:
-Dyad Jr (Micarta) for the serrated edge and the more "civilized" blades.
-Rescue Jr. for the serrated blade, but I've never needed it.
-AFCK for another large blade
-SS Dragonfly if I need one that's flat
-Dozier Slim outdoorsman when I can hide it well. It's new.
-Camillus CQB1 outdoors because it's new too.
 
Usually a single small to medium MD fixed blade.

Generally two -- four less than Blades above -- but my usual load includes a Sifu and Commander. (and No, I don't use them to open any STINKING boxes!
