One step forward, ten steps back. Worldwood, for crying out loud, the guy made an honest mistake, and really offered to make it right. I'll bet your positive feedback went out the window when you started talking about having it inspected and a damage report certified at a local knife shop, and then kept saying you were going to keep it while backhandedly saying how your wife could tell it was used, etc etc etc. He chose not to leave positive feedback for, what he probably felt was an unpleasant transaction. Now you're demanding a public apology or this isn't going to end? Yikes.
