Technically, the BCBS (bourbon county brand stouts), since 2015, no longer age - they started to pasteurize all their stouts due to a massive recall that year, and as such, they'll taste as good today as they will in 10 years, but they won't go through any changes. So, I'd say enjoy them if you have them, whenever you feel is right, but don't expect them to become any more complex.Nice! How is it?

This was a pretty bad thing for BCBS, and while they didn't make me sick or kill me, they all taste awful - this was back when they were very difficult to get, could only get one bottle of each type, and had to get them the morning of Black Friday - I drove all around Denver trying to get as many as I could. The only thing you had to do to get a refund was send the little ear-tag label from the neck back to them - but I was far too lazy. If you drank them before the end of 2015, they weren't bad, but you could tell they were funky, I still aged a few for several years, and they got progressively worse with time. Hasn't stopped me from aging loads of other beers, and wasn't the first or last "bad" beer I'll have from aging - lol. And, I still buy their beers every year, just don't feel like I "have" to age them any longer - that said, I still have bottles from many different years, and still tasty as everIdk why I didn't Know that?
Especially from so long ago???
I can usually buy from 4-5 different years, with different pricing!

Nothing would of killed you.
Bretanomyces is what commonly gets into old barrels... It's just wild yeast. There are many strains.
-Other infections are interesting, too.
Some will make your beers like leather, tobacco, cherry.
Some like sweaty horse.
Or poop.
It's All wonderful, and nothing will Hurt you.
Barrel aging, and blending is quite an Art.
