Same here, been smoking for about 8yrs now. Just got into cooking about 2 yrs ago. Mostly focused on perfecting my red beans, gumbo and red gravy. Also have an incredible crab bisque recipe.Yes. A few butts I cooked on my WSM smoker. I love to cook, especially for others.

Only do the Kettle Fried Chicken in pickle juice. It adds a fantastic flavor. All other chicken I brine in Lanes Sweet Tea brine.
