Cast Iron Beckerheads, Sound Off!

I didn't take many pics, I was too busy enjoying home. That said, didn't anyone use their cast iron for Thanksgiving?
By the way, those portobellos were better than most meat I've eaten. I could live on grilled portobellos.

My lady hates mushrooms, but she will eat those. And that picture looks especially delicious.

Spent Thanksgiving with my wife's family up in Denver, so I needed to cook some turkey, etc, so we'd have leftovers here at home. I used one of my cast iron skillets that I've had since forever ('70's or 80's, I don't exactly remember) to make some of the biscuits from the Duck Dynasty cookbook by Miss Kay. Everyone loved them! Second Thanksgiving is a great idea...

If you don't have the cookbook, a link to a story with the recipe is here:

Who would have thought to use sour cream and 7-Up as the liquid for making biscuits?
(BK5 next to the skillet)

orange juice and/or ginger ale works well for waffles.

Reminds me of a recipe I found for "mini-orange maple french toast breakfast casseroles". Basically 1" bread cubes soaked in a mixture of mascarpone, milk, eggs, orange juice and pancake syrup. I use real maple syrup (I didn't know you needed to refrigerate it after you open the bottle....doh!) and add a little (or a lot) crumbled bacon or pork sausage to give a little savory to go with the sweet. I have always done them in ramekins and dusted with powdered sugar, but since this is the cast iron thread, I'm now thinking I need to try to make a jumbo version in a dutch oven.

I did the yams in my mother-in-law's ancient Lodge skillet. A little butter (okay 1/4C) and some cinnamon, nutmeg and "poultry seasoning" since she didn't have any sage in the house. Browned 'em up nice. They were fantastic. I'm sorry I can't stand by those abominations with all the sugar, marshmallows, candied nuts, etc. Not that they aren't tasty, but they taste like dessert to me, and ruin the savory flavor of a good bird.

I too was too busy enjoying family and food (and wine) to take any pics.

Finishing up the steak and beans for what turned out to be some of the most awesome tacos ever!! I was too busy making a pig out of myself to get pics of the finished product.

I am in NW San Antonio.. used to drive to Boerne lake a couple times a week to swim, but haven't been out in a few years now.

GSO,

Nice job on the Biscuits,

Duck Dynasty Cook Book, i have to get out more.

I guess it beats Honey Boo Boo the movie,

Any one ever wish for a Becker Cast Iron skillet made from 440C stainless, S30V, A2, ATS34, D2, or CPM3V? ;)

Sorry, I just had to go there. :)

Well, after Thanksgiving I had some leftovers that I needed to do something with, so I attempted a turkey pot pie in the dutch oven.

Leftover bits of turkey, gravy, and chunks of mashed potatoes went in the 10 inch dutch oven along with a can of corn and a can of peas. Also, some fresh ground black pepper on the top of course.

I put it on the coals to heat while the wife made up some biscuit dough. I don't waste time with cutting out round biscuits and rerolling the dough. I just cut the dough into squares with a knife. Onto the top went the biscuits.

Add some fresh coals to the lid.

And let it cook

until the biscuits are done.

I think I have to say the Thanksgiving leftovers were better than the Thanksgiving meal itself.
