Cast Iron Beckerheads, Sound Off!

Thanks guys. The history is pretty cool. I was reading last night, that a good oven cleaner, such as Easy Off Heavy Duty, will work well to clean it. Lye is a key ingredient in cleaning cast iron. It's chemical name is sodium hydroxide, and the good foam spray cleaners have it. They said to spray it down good, and wrap it in a plastic garbage bag for a few days, reapplying if necessary. After the crud softens up, rinse it off. Then apply oil and cure it. It should look pretty good when done.

Griswold man right here!! Mine are 1930's vintage skillets. LOVE my Griswold's... Far superior quality to anything I've seen today. I'll attach a pic soon as I'm able.

Pretty much all you need to do. Cast iron is an incredibly versatile cooking material. I still use some aluminum core/stainless clad pans when I want to observe the amount of fond before deglazing, but otherwise we tend to use cast iron.

Here's the one my wife got from her grandma. It's good.

1 cup whole milk
1/4 cup butter (melted)
1 large egg
1 1/4 cup yellow cornmeal
1 cup all purpose flour
1/2 cup sugar
1 TBL spoon baking powder
1/2 tsp salt

preheat a greased cast iron skillet at 400

beat milk, butter and egg with a fork

combine the rest of the ingredients with milk butter egg mixture (don't overmix, it should be lumpy)

pour in the skillet and bake 20 minutes



...and Jiffy in cast iron is damn good too
 
1 can pumpkin pie filling (big can, already has sugar and spices added)
2 boxes corn muffin mix.

stir together, drop by dollops onto a cookie sheet or into an oiled cast iron skillet.
bake or fry.
eat.

nope - just those 2 "ingredients" - works good, can be poured into a pan and fried like a pancake or baked up like traditional cornbread.
 
I can fix em for the gathering here for Sunday morning breakfast if that'll help ensure you and Kay show up. :D
